Postbiotic
What does it mean to be a postbiotic snack?
The positive gut health benefits of this product are postbiotic in nature, rather than probiotic.
What does it mean to be a postbiotic snack?
Postbiotics are "a preparation of inanimate microorganisms and/or their components that confers a health benefit on the host.”
We ferment the almonds with live probiotics, but then dehydrate them to achieve our epic crunch and shelf stability. This renders the probiotics inanimate.
However, there are health benefits to eating inanimate probiotics! They send signals to the living microbes in your gut and can increase microbial diversity in your gut.
In addition, the healthful compounds they produced while they were alive (aka their components - the bioactive components released into the food as by-products of the fermentation process) also remain in our products, which have health benefits for the host (you!):
-Increases in vitamins B & D
-8-9x more antioxidants means you feed your microbiome with its preferred fuel, such as polyphenols.
"Antioxidants are compounds that help neutralize harmful molecules called free radicals and reduce inflammation. They may also protect against a host of chronic conditions, including cancer, diabetes, and neurodegenerative disorders like Alzheimer’s disease" - Healthline
-Lactic acid, which is responsible for our unique umami and tangy flavors, also creates longer shelf life, increased absorption of certain nutrients, and can promote increased microbial diversity in your gut.

Delicious, unique flavor
Gut Nuts are fermented with probiotics that generate tangy and umami flavors in nuts that were formerly sweet. Think sourdough nuts.

FAQs
Got questions? We’ve got answers
Why are Gut Nuts more expensive than regular nuts?
Gut Nuts have 8-9 x more antioxidants than raw nuts of the same variety, so you would literally have to eat 8-9 regular nuts to get the same amount of antioxidants. Given that we’re not typically more than 2x more expensive per oz than regular organic nuts, we think that type of nutrient density is a bargain!
Our almonds also go beyond Organic to be Regenerative Organic Certified, which is the gold standard of regenerative agriculture that builds soil health, honors worker fairness in wages and working conditions, and protects animal welfare.
What is your return policy?
We are a small craft food business and do not accept product returns or exchanges. All sales are final.
The nature of small batch artisanal craft food production is that every batch is a little different, and that both the taste and texture may be unlike other commercially mass-produced nut butters and snacks. For this reason we do not offer refunds for taste or texture complaints.
However, if ever a product does not meet your expectations for the high quality you are accustomed to from Philosopher Foods please contact us right away so that we can address your concern.
When do you ship orders? When will my order arrive

Gut Nuts - Fermented Almonds and Cashews do not need to be refrigerated. They are shelf stable for at least 24 months from the date of production stamped on the package.
How can I buy in bulk?
Buy 4 lb bags on this page under the size option above.
If you want larger quantities than this, please shoot us a message on our contact page, located here.
Are the almonds blanched?
Nope!
Gut Nuts fermented almonds are made with whole, sprouted, fermented, and dehydrated almonds.
Blanching is not a route we have pursued because it renders the seed non-viable and thus unable to sprout. Also, it reduces nutritional profile through exposures to high heat.
We have found that leaving the skins on the almonds instead of blanching them makes a more holistically nutritious food product. In fact, the skins are loaded with polyphenols that give almonds their health benefits!
The Ayurvedic tradition of blanching recommends blanching almonds because the skins are the hardest part of the almond to digest. However, our unique process of sprouting and fermenting the almonds compensates for this by making Gut Nuts highly digestible, without losing the precious nutritional benefits of the skins.
Are Gut Nuts roasted?
Nope! Roasting harms nutrient profiles and generates the carcinogen acrylamide.
Are Gut Nuts sprouted?
Yes, the Gut Nuts are sprouted because they soak in water. We then add probiotic cultures which go beyond sprouting to incite fermentation. So you have all the benefits of sprouting, then more!
Our Gut Nuts are lacto-fermented for a full 10 days before they are dehydrated.
